After graduating from university, I moved to Australia alone and learned the basics of cooking through work at local restaurants. Upon returning to Japan, I joined the Hyatt Regency Fukuoka, where I was responsible for the main dining and wedding cuisine. Later, I took on the role of cooking chief and store manager at a café restaurant to cultivate a management perspective. I also played a core role in management as a chef involved in the launch of a new restaurant wedding venue, not only in cooking but also in management. In 2012, with great anticipation, I opened my own restaurant in Kyoto's Gion district. The restaurant became popular, featured in the media for its original cuisine that transcends genres of French, Japanese, and Western styles. In December 2023, I joined the Centara Grand Hotel Osaka, seeking new challenges in the hotel industry. Currently, I oversee the cuisine for all-day dining, banquet halls, and in-room dining. Aiming to provide unique culinary experiences available only here, I lead a multinational team, leveraging my linguistic skills to meet the needs of guests from both Japan and abroad.
