According to Chef Seksit Banlusan, the Head chef of Roukh Cuisine restaurant, the idea began with a deep appreciation for the quality of local produce. “Many ingredients grown in Khao Yai rival imported products in both flavour and quality, yet many visitors have never experienced them,” he explains. “By bringing ingredients directly from the farm to the table, we can showcase the authentic tastes and aromas of this region.”

Seasonality plays a central role in the kitchen’s approach. Each menu is thoughtfully designed around ingredients that are freshest and most abundant throughout the year, from leafy greens and root vegetables to aromatic herbs grown nearby. This seasonal mindset not only ensures peak flavour but also allows the kitchen to remain closely connected to nature’s rhythm.

Chef Seksit Banlusan also highlights the importance of sustainability and quality control. By sourcing locally and growing produce close to the restaurant, the team can ensure freshness, traceability, and chemical-free cultivation practices while supporting the surrounding agricultural community.

One signature example is the local Potato Gnocchi, made using potatoes grown in Khao Yai and paired with locally produced cheese and herbs from the garden — a dish that beautifully reflects the land, seasons, and spirit of Roukh Cuisine.
