Chef Hideo Tsukada

Born in Saitama, Chef Hideo Tsukada has developed his career in French cuisine, refining his classical techniques and international perspective through training at Camberley Heath Golf Club in the UK. As Chef de Cuisine of KUNSEI, he now leads the restaurant into a new chapter as a modern bistro, where refined French cuisine can be enjoyed in a more approachable, everyday style.

“By bringing together Japan’s seasonal ingredients and traditional French techniques, I hope to create cuisine that is refined yet approachable. While cherishing KUNSEI’s signature essence of smoke, I aim to bring out the aroma, lingering finish, and natural character of each ingredient. With respect for Japanese food culture and its producers, I hope KUNSEI will be a restaurant where guests can discover something new with every visit.”
