KUNSEI Chef de Cuisine Hideo Tsukada
Born in Saitama, Hideo Tsukada has built his career in French cuisine, refining his classical French techniques and international sensibility through training at Camberley Heath Golf Club in the UK. Newly appointed as Chef de Cuisine of KUNSEI, he begins a new journey for the restaurant as a modern bistro where refined French cuisine can be enjoyed in a more approachable, everyday style.
“By bringing together Japan’s seasonal ingredients and traditional French techniques, I hope to create cuisine that is refined yet approachable. While cherishing KUNSEI’s signature essence of smoke, I aim to bring out the aroma, lingering finish, and natural character of each ingredient. With respect for Japanese food culture and its producers, I hope KUNSEI will be a restaurant where guests can discover something new with every visit.”
